Thai Turkey Patties with
Chilli Sauce
 
Ingredients: serves 4
 
500g minced Kellybronze Turkey leg meat
4 spring onions, chopped
1 large garlic clove, crushed
100g Breadcrumbs
2tbls Fresh coriander, chopped
4tbls Coconut milk
1tbls lime leaves, finely chopped
2tbls Thai red curry paste
2tbls Vegetable oil
1tsp Sesame oil
 
Method:
Combine all the ingredients in a large bowl to make a firm mixture. Divide into eight
patties. Flatten between two sheets of cling film, heat the vegetable and sesame oils
in a pan and shallow fry the patties for 6-8 minutes turning once.
 
Serve: with noodles and a garlic chilli sauce.

Home made beef burgers with Chilli Salsa and Soured cream
 
Ingredients: serves 6 people
 
900g(2lb) Springfields Farm minced beef
3 Garlic cloves, crushed
1 small onion, finely chopped
2 tsp minced red chilli
1tbls sweet paprika
2tsp oregano
Salt & freshly ground pepper
 
Chilli Salsa
Ingredients:
4 vine ripened tomatoes, skinned & chopped
1tsp minced red chilli
1/2 red onion, finely chopped
20g packet coriander, chopped
2 tsp lime juice
6 soft buns sliced almost through  
 
Method:
Make sure BBQ is well established before cooking or use a heavy based ridged ridged griddle pan
Put the minced beef, garlic, minced chilli, paprika,oregano, 1tsp salt & pepper into a bowl & mix together with your hands. Divide the mixture into 6 & shape into burgers about 2.5cm(1 inch) thick by pressing the mixture into a 9cm(31/2 inch) plain pastry cutter. Cook the burgers over a medium heat for 5 mins on each side. Toast the soft buns cut side down around the burgers for the last 2-3 mins of cooking.
Next make the salsaby mixing all the ingredients together, adding a little salt to taste.
 
To Serve, put burger on bottom half of bun then spoon some salsa & soured cream on the top with the other half of the bun.
You can also serve with an onion & tomato salad
